Location & Altitude: Kibirizi is situated in the Kibirizi Sector of Nyamagabe District in Southern Province, at approximately 1,770–1,785 m above sea level. This high-altitude terroir supports slower cherry maturation and depth of flavor.
Agro‑climate: The region benefits from volcanic soils and moderate rainfall (~1,300–1,400 mm annually), with average temperatures around 17–18 °C—ideal conditions for high-quality Bourbon arabica cultivation.
The Kibirizi Washing Station & Farmer Community
Establishment: Kibirizi CWS began operations in 2021, under RWACOF (Sucafina) management, sourcing cherries from approximately 1,130 smallholder farmers in surrounding villages.
Farm Profile: Nearly all farmers cultivate Bourbon arabica on small plots under one hectare, reflecting Rwanda’s emphasis on community-based production.
Processing Methods & Practices
Honey Processing: At intake, ripe cherries are float-tested and depulped, leaving mucilage for honey processing. The beans then dry on raised beds for 14–21 days, with frequent turning to ensure uniform drying and prevent spoilage.
Quality Control: Consistent hand sorting and grading during intake and finishing help ensure high cup quality and clarity.

Tasting Notes: Roasters describe the Kibirizi honey-processed lot as bright and intense, with red fruit character (dried cherry, cranberry), kiwi-like acidity, and floral notes such as hibiscus. Secondary sweetness registers as cane sugar or crème brûlée.
