As farm manager, Moses oversees the daily operations that transform coffee from cherry to export-ready green coffee. His responsibilities include supervising cultivation, coordinating the selective hand-harvest of ripe cherries, managing wet mill operations, and ensuring each lot is carefully fermented, washed, and dried on raised African beds. Under his management, the estate cultivates classic Kenyan varieties including SL-28, SL-34, and Ruiru 11.
