Lake City sits where Interstate 10 crosses Interstate 75, and a lot of its coffee demand is people passing through: the hotels and restaurants at the exits serve travelers who are gone by nine. The rest is a county seat's steady institutions, the Columbia County courthouse and offices, the VA medical center, Florida Gateway College and the downtown cafes around Lake DeSoto, and churches that are the center of social life, running Sunday tables, Wednesday suppers and food ministries.
