Bourbon Coffee: A Foundational Arabica Cultivar

Bourbon is one of the most historically significant and widely cultivated cultivars of Coffea arabica. Known for its excellent cup quality, Bourbon has played a central role in the genetic lineage of many modern coffee varieties and continues to be cultivated across Latin America and East Africa. It is highly valued in the specialty coffee sector for its sweetness, complexity, and balance.

Origin and Genetic Lineage

The Bourbon cultivar traces its origins to coffee plants taken from Yemen to the French island of Réunion (then known as Île Bourbon) in the early 18th century by French missionaries. From Réunion, seeds were later introduced to mainland Africa and Latin America. Bourbon is a Typica-related variety and is considered one of two main branches of Arabica coffee’s genetic heritage, the other being Typica itself.

As Bourbon spread across coffee-growing regions, it underwent various natural mutations and selections, leading to the emergence of closely related cultivars such as Caturra, Pacas, and SL28—each of which retains key genetic traits from Bourbon, particularly in cup quality and morphology.

Agronomic Characteristics

Bourbon plants are typically tall with broad leaves and pronounced lateral branching. They produce moderate yields under favorable conditions and are generally more productive than Typica, though less than newer hybrid varieties. Bourbon cherries are typically round and dense, and the plant exhibits red, yellow, or orange fruit mutations depending on the strain.

Despite its agronomic appeal, Bourbon is known for being highly susceptible to major coffee diseases, particularly coffee leaf rust (Hemileia vastatrix) and coffee berry disease (CBD). Its vulnerability has prompted many farmers to replace it with more disease-resistant hybrids in high-risk regions.

Cup Quality and Sensory Attributes

Bourbon is widely regarded for its exceptional cup quality, especially when grown at high elevations with favorable climatic conditions. Coffees from this cultivar tend to exhibit:

Balanced acidity (typically medium to high)

Round and smooth mouthfeel

Pronounced sweetness, often likened to caramel, honey, or brown sugar

Complex fruit notes, including citrus, cherry, apple, stone fruit, and sometimes tropical or floral nuances

The cultivar’s clarity and sweetness make it highly desirable for single-origin coffees, microlots, and competition lots in the specialty market. It is particularly well-suited to washed processing, which accentuates its brightness and structure, though natural and honey-processed Bourbon lots can yield rich, fruit-forward profiles.

Regional Distribution

Today, Bourbon is cultivated across several key coffee-producing regions:

Latin America: Particularly in El Salvador, Guatemala, Honduras, and Peru, often at elevations above 1,200 meters.

East Africa: Especially in Rwanda and Burundi, where Bourbon has become foundational to national coffee programs.

Brazil: Home to Yellow Bourbon, a natural mutation that developed in the early 20th century.

Each region’s terroir influences the final cup, but the cultivar consistently performs well when carefully harvested and processed.

Variants and Descendants

Bourbon’s genetic instability and environmental adaptation have led to several natural mutations and stabilized lines, including:

Red Bourbon – The standard and most common form

Yellow Bourbon – Identified in Brazil, known for citrus brightness and pronounced sweetness

Orange Bourbon – A rarer mutation, with similar characteristics to Red Bourbon

Caturra and Pacas – Dwarf mutations of Bourbon, offering more compact growth with similar flavor potential

SL28 – A Kenyan selection that, while drought-tolerant and more resilient, descends partially from Bourbon

These descendants reflect Bourbon’s influence across many of the world’s most celebrated cultivars.

Challenges and Sustainability

Despite its flavor potential, Bourbon’s disease susceptibility and relatively lower yields make it a risky choice for many producers—particularly in regions vulnerable to rust outbreaks. Nevertheless, its genetic traits continue to inform modern breeding efforts aimed at creating varieties that combine Bourbon’s quality with greater resilience.

Research institutions and breeding programs continue to use Bourbon as a base for new selections, particularly those that seek to balance cup quality, yield, and disease resistance.

The Bourbon cultivar remains a cornerstone of specialty coffee production and breeding. Its historical importance, genetic contributions, and sensory excellence ensure its continued relevance in the coffee industry.
