Who buys wholesale coffee in Niceville

Niceville and Valparaiso sit on the north shore of Choctawhatchee Bay with Eglin's main gate between them, which makes this a base town with the beach on the other side of the water. Demand is steady and weekday-shaped: contractors and offices along John Sims Parkway, Northwest Florida State College, the medical practices around the hospital, and churches that are among the biggest congregations on the Emerald Coast. The one spike on the calendar is the Mullet Festival in October. Most accounts here are a church serving a lobby crowd between services, an office or contractor, or a cafe on John Sims Parkway.

Niceville is the easy one on the Emerald Coast. There's no summer swing to speak of, so a base quantity on the Wednesday cadence rarely moves. What does move is the church calendar and the college calendar, and a church with a student ministry has both, so we set the pattern to the church year. Families rotate through Eglin every few years, which is a reason to keep the coffee consistent while the congregation changes. A distributor's case was roasted weeks before it was picked; ours was roasted the week it left.
