A Finer Grind Changes the Taste Before It Changes the Strength

A finer grind makes coffee slightly stronger and changes how it tastes long before it changes how strong it is. That's the misconception worth clearing: strength is how much dissolved coffee sits in your cup, extraction is how much of the grounds dissolved into it, and grinding finer moves the second far more than the first.

Strength is in the cup; extraction is what left the grounds

Two quantities hide under the word "stronger," and the people who measure brewing for a living keep them apart. Strength is the share of the liquid in your cup that is dissolved coffee rather than water. Extraction is the share of the ground coffee that dissolved and went into that liquid. One describes the drink. The other describes what happened to the grounds it came from.

Both are smaller numbers than most people expect. In a 2020 study in Scientific Reports, Batali, Ristenpart and Guinard brewed drip coffee to three fixed strengths: 1, 1.25 and 1.5 percent dissolved solids. At 1.25 percent, nearly everything in the mug is water, and the coffee is the small remainder you taste.

The two quantities move independently, and that's what the word "stronger" conceals. A cup can be concentrated and under-extracted, which reads as sour and heavy at once. It can also be over-extracted and thin, which is the combination that sends people to the grinder. The flavors a roaster prints on a bag describe what extraction pulls out of the coffee, never how much of it ends up in your water.

How much coffee you use sets the strength; the grinder sets the balance

Watch how the drip research is built and the dial assignment settles itself. Batali and his co-authors chose a strength target and an extraction target first, then adjusted grind size and brew time until the brew reached both. Grind is the tool for where you land on the extraction curve. It's not the tool for how concentrated the drink is.

Every bag we send out carries a starting recipe, and the thing that decides how strong your cup lands is the weight of coffee you measure out, not the setting on the grinder. That holds for a bag off the drip shelf and a bag off the espresso shelf alike. The brewer changes what the coffee tastes like. The weight still sets the concentration.

Espresso is the honest exception, and it belongs out in the open rather than buried in a caveat. A shot is pulled from a fixed dose to a fixed weight in the cup, so the ratio is held still while the grind moves. Grinding finer there raises extraction inside a ratio that can't change, and the shot really does arrive more concentrated. Filter brewing hands you the ratio to set yourself, which is why the same adjustment behaves differently in a basket and in a brewer.

Past a point, grinding finer extracts less, not more

The intuition that sends a hand to the grinder is simple and it's got no ceiling in it: smaller particles, more surface area, more dissolved coffee, all the way down. The measurement disagrees. Cameron and his co-authors, writing in Matter, volume 2, pages 631 to 648, on 4 March 2020, DOI 10.1016/j.matt.2019.12.019, report that experimental measurements show a peak in the extraction yield versus grind setting relationship, with lower extraction yields at both very coarse and very fine settings.

It's physical rather than chemical. Grounds that are too fine pack tighter, the bed resists water unevenly, and the water takes the loosest path through. Part of the bed gives up far too much and part of it is barely touched, so the average yield falls even though the surface area went up. The coarse end of the curve fails for the opposite reason, with too little surface exposed in the time the water has.

That paper modeled and measured espresso, and the channeling it describes belongs to any brew where water travels through a packed bed of coffee. It also carries the band worth knowing: the Specialty Coffee Association advises that coffee most often tastes best when 17 to 23 percent of the dry mass has been extracted. Both edges of that band are reachable from a grinder, and so is the far side of the peak. A grinder setting isn't a permanent quantity either, which is a separate problem we've written about and not the one in front of you today.

A cup can be over-extracted and under-strength at once

Bitter and thin at the same time isn't a contradiction, and it isn't a bad bag. It is the signature of a grind pushed past the peak Cameron and his co-authors measured, at a dose too small to make a concentrated drink in the first place. The bitterness comes from the part of the bed that gave up too much. The thinness comes from the weight of coffee, which nothing on the grinder was ever going to change.

Fix them in that order. Put the grinder back where it was, add two grams of coffee to the same volume of water, and taste it again. If the cup's stronger and still harsh, then move the grind coarser. Changing both in one go teaches you nothing, because the two effects land on top of each other.

Grind isn't always the lever, and this is the point where we'll talk you out of the recipe entirely. If the machine is overdue for service, no setting will rescue it, and that's a question about how often a brewer needs descaling rather than about your coffee. If the beans are months past their roast date, or the water going in tastes of the pipes, a different bag from us won't fix that either.

Does a finer grind make coffee stronger?

Slightly, and not in the way most people are hoping for. At a fixed dose and a fixed volume of water, a finer grind raises extraction, so a little more coffee dissolves and the drink lands marginally more concentrated. The taste changes far more than the concentration does, and past a certain fineness extraction falls off again. If you want a stronger cup, add coffee.

What is the difference between coffee strength and extraction?

Strength is how much dissolved coffee is in the finished drink, and extraction is how much of the ground coffee dissolved to get it there. Strength describes the cup; extraction describes the grounds. You set strength mainly with the weight of coffee against the weight of water, and you move extraction with grind size, contact time and agitation.

Why does my coffee taste bitter and weak at the same time?

That pairing usually means the grind is too fine for the dose you used. A bed that is too fine channels, so parts of it over-extract and turn bitter while the average yield drops, and a small dose was never going to produce a concentrated drink anyway. Add coffee first, taste it, and only then move the grind coarser.

Can you fix weak coffee by grinding finer?

A little, then it stops working, then it goes backwards. Change the weight before you change the grind

We grind to order at no charge, and the honest thing to say about that is what it won't do: a grinder set for your brewer is aimed at balance, and it won't turn a thin cup into a strong one. That half is yours, and it's the easier of the two to move.
