What Is Malic Acid in Coffee?

Malic acid is one of the organic acids a coffee plant builds into its fruit, and in a brewed cup there is usually too little of it left for anyone to pick out. Measured acid by acid across three roast levels, malic ran 0.204, 0.156 and 0.118 milligrams per milliliter of brewed coffee, lightest to darkest. Citric acid in the same cups came in two to three times higher: 0.493, 0.396 and 0.316. Spiked back into coffee at the concentrations actually found there, citric was the only acid tasters could reliably detect. Malic sat at or below the level where a person can tell it is present at all.

Where does the malic acid in coffee come from?

The plant makes it. Malic acid is common in fruit, and it is most of what gives an unripe apple its bite. Coffee is a fruit before it is a seed, so the acid accumulates in the cherry and carries through into the green bean.

Roasting then takes it apart. Those three numbers are that decay written down: the lightest roast holds the most malic acid and the darkest holds about 40% less. The same work found chlorogenic and citric acid falling the same way, while quinic, acetic and lactic acid climbed. Acid in coffee is not one thing going up or down together.

Why does malic acid get called green apple?

Because of the apple. Perfect Daily Grind traces the name to malum, Latin for apple, and calls malic acid's flavor the one most often associated with green apples. Sweet Maria's glossary says it "often adds apple-like acidity." Green Coffee Collective puts it hardest: "Malic acid is what gives some coffees an apple or stone fruit quality."

Those descriptions are accurate about the pure acid. A cup of coffee is a different object. Barista Hustle read the 2023 measurement these numbers come from and stated the consequence plainly: the average concentration of malic, lactic and acetic acid in brewed coffee sits below the threshold at which people detect them, and coffee professionals asked to name the acid they were tasting could not do it. That finding is theirs and it holds.

So does a light roast have more malic acidity?

It has more malic acid, which is not the same claim. Light roasts do taste brighter, and they do carry more of several acids at once, malic included. What the measurement will not support is the step from there to a particular acid being the thing your tongue found.

Acidity arrives as one sensation. Citric is above its threshold and carries most of the weight. Aroma pushes the perception around before any acid gets a vote. What reaches you is the sum, and the sum is what a taster is naming.

Why does our own site say malic acidity?

Because it is the quickest way to point at a shape. Our page for the SL-28 cultivar describes "Sharp, structured citric and malic acidity, most often described as blackcurrant." Five other routes here use the phrase the same way, on cultivars and on a growing region.

We have printed that phrase on six pages and left it undefined behind them. That is a fair thing to hold against us, and this is the page that fixes it.

The word is doing what every tasting note does: standing in for a comparison rather than reporting a reading. We do not test our coffees for acidity level, and we say so on our low acid page. Our acidity language comes off a cupping table, and that costs us something real. A note naming a compound sounds like a lab result, and what I actually have is a spoon and a score sheet. We will keep writing malic acidity, because tasters recognize the shape it names and no shorter word does the job. What it should not be read as is chemistry.

That is the same distinction as every other word on the bag, and we have written about where tasting notes come from at length. A tasting note is a name for a shape, not a reading off a meter. Malic acidity is a good name. It is not a measurement.
